Among many other wonderful things about weddings is the chance to get your favorite people together over good food and good drinks. Between sips of champagne and slices of cake, guests are sure to have a good time sampling all the goodies. Its especially fun if you create a signature cocktail for your guests to try. Whether youre having a full bar or a more limited one, the signature cocktail is overwhelmingly a guest favorite. Surprisingly, creating one can be easier and cheaper than you think. Even on a more limited bar you can do a little negotiating with your caterer and swing the fixings for something fun.   Now you or your fiancé probably have a favorite cocktail that youd like to serve your guests, but in case you dont, I thought I would share a wedding twist on a favorite of mine. In the heat of the summer I find I can always relax on a porch or patio somewhere with a minty and refreshing mojito. The mix of cool mint and citrus is perfect for a hot day. Even more perfect for a wedding cocktail is a recipe I found for a Champagne mojito. I also happen to be very fond of champagne, and I find that when you add that touch of bubbles to a drink it becomes infinitely better. Its also a great way to use all the champagne left over from the toast. Delicious and practical? Cheers.   Champagne Mojito photo and recipe from Foodie Crush. Serves: 6 servings Ingredients
  • ¼ cup fresh mint leaves, plus more for garnish
  • ¼ cup thai basil leaves
  • 3 tablespoons super fine sugar
  • 2 limes, cut into wedges
  • 1 cup rum
  • 1 bottle cold champagne
Instructions
  1. Put the mint, thai basil, sugar and lime wedges into a small glass and muddle, in batches if needed. Pour the rum into a pitcher and add the mint mixture and lots of ice. Top with the Champagne and pour into glasses filled with ice. Garnish with fresh mint or thai basil.
